The Forbidden Rice: Black Rice!

The following recipe comes from Cottage Cozy

We have a wide range of herbs, spices, and rice on our site one of these rices is black rice.  This is a wonderful Chinese inspired recipe using black rice, so next time your buying rice why not have a change!
Black rice (Forbidden Rice) is a heirloom variety of rice.  The rice is naturally high in iron, which causes the dense purple color, and since the bran is left on the rice it is also high in fiber.

Shrimp & Vegetables over Steamed Black Rice

  • one cup Saute peeled, headless shrimp with
  • mushrooms (sliced in half) 1/2 pack,  1/2 a sliced green pepper and 1/2 an onion

For the sauce I used some fish oil (one tablespoon)  soy sauce (one tablespoon), Asian 5 spice seasoning (to taste), lemon pepper and garlic salt to taste.

  1. As the veggies cook they produce a lot of water, so add a paste of 2 tbl. cornstarch with a bit of thicken the broth.
  2. The last few minutes add about 1 1/2 cups shredded cabbage.

Serve over the steamed black rice!

notes: As a general rule, black rice should be cooked with two cups of water to every one cup of rice, and it will need to cook for 20 to 30 minutes after soaking, or 60 minutes if you cook unsoaked rice.

( I soak my rice for an hour before cooking in my rice cooker. )
