Cod in a Parsley Sauce

The following recipe is a British Classic, simple to make and wonderfully tasty parsley pairs perfectly with cod.

Ingredients:

  • 2 fillets of cod
  • 1 cup of milk
  • one tablespoon of butter
  • 1 tablespoon of flour
  • 1/2 a bunch of fresh parsley or dried parsley both work equally well
  • 2 slices of swiss cheese or cheddar cheese
  • salt and pepper
  • olive oil

Method:

  1. poach the cod in olive oil and salt and pepper  turn to a low heat for 5 minutes.
  2. in a separate pan make a rouxe with the flour and butter then slowly add the milk, continuously stirring it so there are no lumps
  3. after a couple of minutes add the cheese and add parsley stir until you get a nice thick and creamy sauce
  4. add to the cod and simmer for 2 minutes.

    I am not always the biggest fan of fish, but I must say, I am quite intrigued by the parsley sauce!
