Cod in a Parsley Sauce

The following recipe is a British Classic, simple to make and wonderfully tasty parsley pairs perfectly with cod.
Ingredients:
- 2 fillets of cod
- 1 cup of milk
- one tablespoon of butter
- 1 tablespoon of flour
- 1/2 a bunch of fresh parsley or dried parsley both work equally well
- 2 slices of swiss cheese or cheddar cheese
- salt and pepper
- olive oil
Method:
- poach the cod in olive oil and salt and pepper turn to a low heat for 5 minutes.
- in a separate pan make a rouxe with the flour and butter then slowly add the milk, continuously stirring it so there are no lumps
- after a couple of minutes add the cheese and add parsley stir until you get a nice thick and creamy sauce
- add to the cod and simmer for 2 minutes.

I am not always the biggest fan of fish, but I must say, I am quite intrigued by the parsley sauce!
